Use this rub in your favorite Pulled Pork recipe. Use a generous amount of the rub.

Ingredients

Thyme, fresh and removed from stems

Garlic, dry and minced

Whole Black Peppercorns

Boston Butt Pork Roast

Place the peppercorns and the whole cloves in a mortar and pestle. Grind into a course mixture. Set aside.

Place the thyme, sea salt, garlic in a small bowl. Mix to combine. Place the peppercorn mixture in the bowl. Mix to combine. Add the olive oil and mix to incorporate.

Thoroughly rub a 7 pound plus Boston Butt Pork Roast with the rub. Let set for about 1 hour.

Place in a pre-heated 300 degree F oven and cook for 7-9 hours. The pork will fall apart.
